Why do we use Shiitake mushroom?

Considered the ‘King of Mushrooms’, it has been cultivated in Asia even before rice. This mushroom is widely used in vegan and raw diets and it is best known for its beneficial properties due to the strong presence of beta-glucans, antioxidants, potassium, iron, calcium, zinc, vitamins (B2,B12,D2) and ergosterol.
